Foraging in the Freezer


I was searching through the bottom drawer of the freezer and found a bag of over ripe bananas. I didn't date the bag so I had no clue how long they had been in there. They didn't looked frosty, so I thawed them, and they were fine. I pondered making a traditional banana bread, but it seems that in a household of two, the last bit always ends up wasted. Muffins, on the other hand, always get eaten. Since Jeff and I are both huge blueberry fans, I searched for a recipe for banana blueberry muffins. The recipe I chose has a cinnamon crumb topping... I knew it was the winner!


I tweaked the recipe slightly by adding 1 1/2 cups blueberries, because that is the increment I freeze them in. This couple likes a muffin LOADED with blueberries! I made 11 muffins instead of 12, because I prefer odd numbers. Actually, I prefer larger muffins.

  1. This is just what I need! Thanks for the link to recipe. I'm making these! Just was wondering what to do with the last frozen blueberries (will thaw before using) and those bananas. Oh yes!

    1. I used frozen (thawed) blueberries too. Just one more bag left from last summer :-(

    1. Whenever I have a banana or two that is over ripe and I don't have time to use them in baking... I put them in a ziploc bag in the freezer to use later.

  3. I never thaw my blueberries before I use them in muffins or anything.
    We love blueberries........wonder where you got those, ;)

    1. yep, they are Whynot blueberries! Good to know that you never thaw them. I have been tempted to just throw them in but thought they might add too much water to the batter.

  5. beautiful muffins, I have lots of blueberries in the freezer, need to find a gluten free recipe one of these days. never knew you could freeze bananas.

  6. I made them Michele! I drained the water from the blueberries (commercially frozen) and then added a couple tablespoons of flour to them, because they were still very moist. I got 14 mufffins and several were gone before they cooled completely! I froze the rest, and they thaw in 20 seconds on high in the microwave just fine. Wish I had local blueberries in the freezer, but didn't do that this year.
