Foraging in the Freezer


I was searching through the bottom drawer of the freezer and found a bag of over ripe bananas. I didn't date the bag so I had no clue how long they had been in there. They didn't looked frosty, so I thawed them, and they were fine. I pondered making a traditional banana bread, but it seems that in a household of two, the last bit always ends up wasted. Muffins, on the other hand, always get eaten. Since Jeff and I are both huge blueberry fans, I searched for a recipe for banana blueberry muffins. The recipe I chose has a cinnamon crumb topping... I knew it was the winner!


I tweaked the recipe slightly by adding 1 1/2 cups blueberries, because that is the increment I freeze them in. This couple likes a muffin LOADED with blueberries! I made 11 muffins instead of 12, because I prefer odd numbers. Actually, I prefer larger muffins.


They turned out great. A perfect breakfast on a chilly Saturday morning. Here is a link to the recipe:

Thursday's Breakfast

Life's been crazy. The daily struggle is finding a balance between work in the pottery studio and getting this move completed. Jeff and I have spent too much time this week wrestling with curtains. The only reason we are hanging them is because the windows are big and we need to filter some of the wonderful sunlight that comes streaming in. If we didn't, we might bake in the southern heat... and boy is hot this week. Mid to high 90's everyday.
We have a few finishing touches to complete in the kitchen. Maybe there will be photos here tomorrow. Have a great day!

pizza for breakfast!!!

i have been experimenting with tom gray's pizza/focaccia dough recipe.  the neatest thing about it is that you can make it ahead and keep it in fridge.  this morning i decided to use the last of the dough and make a breakfast pizza...

jeff was a little skeptical but once he tasted it he thought it was yummy.  here is how you do it-

after your dough is stretched out pour scrambled egg on to the crust... i scrambled two eggs but my dough was small and i didn't use all the egg.  
i then sprinkled emeril's essence seasoning on the egg
topped with a mix of shredded mexican cheese and a little mozzarella
thinly sliced onion
chopped up sausage (already cooked... leftover from the day before)

bake at 425 - 450 depending on your oven... i didn't time it but it was probably around 15 min +/-
i use a pizza stone and i also have a cuisinart toaster oven that has ceramic walls made especially for baking pizza.

it sure was delicious and next time it's going to have BACON!!

it's going to be a PERFECT day.

i have a lot of things dancing through my head these days... even though i didn't get to bed until 1:00 am i was wide awake with sophie at 7:00.  we are tackling putting the studio together this week and our goal is to be able to throw a few pots by tomorrow.  i can hardly wait!

decided to start the day off right... egg sandwich with a little mexican cheese on oatmeal toast with fruit salsa (mango, papaya & few blueberries).  the plate is one of the first ones i ever made... way back when i was jeff's student... the wood fired mug is by tara wilson.
